As January unfolds and winter’s embrace settles in, there’s no better time to cozy up to comforting and nourishing dishes. This month, we’ve curated a selection of five delectable recipes to elevate your culinary experience. 1. Hearty Vegetable Soup: A Winter Warmer

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions:

  1. In a large pan, sauté onions in olive oil until translucent. Add Arborio rice and cook for 2 minutes.

  3. Begin adding hot vegetable broth one ladle at a time, stirring continuously until absorbed. Continue until the rice is creamy and cooked.
